What Is Fricassee Chicken
Chicken Fricasse is a traditional French dish made with chicken and has a stew like consistency. Here is an alternative recipe for making fricasse chicken.
Ingredients needed
- 1 Chicken
- 2oz (50g) almonds
- 1 onion
- 2 Cloves garlic
- 1 Egg Yolk
- Saffron
- Chicken Stock
- White Wine
- Olive Oil
- Salt
Preparation
Choose the size of chicken as part of your preparation, according to the number of servings you want to have. Make sure that any remaining feathers are removed from the chicken. Wash the chicken, dry it well and cut into pieces and season.
Brown the chicken evenly all over by frying in a frying pan with hot oil. Place the pieces in a casserole dish.
After chopping the garlic and onion, sauté them in the same oil. Next, toast the saffron. Add it to the pan together with half a glass of white wine and a glass of stock. Bring the mixture to boil, then simmer for a while before pouring it over the chicken. Cover the pan and place it on a low heat for about 30 minutes, until the chicken is tender.
Using a mortar and pestle, crush the peeled almonds with the hard-boiled egg yolk. Pour a little water into the mortar, then add the mixture to the casserole. Stir and then cook for a few minutes. Serve this dish hot.
