How to Cook Stuffed Mussels
Ingredients
- 3lb (1.5kg) Mussels
- 5oz (150g) Cured Serrano Ham
- Onion
- Butter
- Flour
- Milk
- 1 Egg
- Breadcrumbs
- Olive Oil
- Salt

Mussels usually come with beards which have to be removed. So prepare the mussels by scraping their shells with a knife and remove the beards. Give them a thorough wash in cold water. Reject those that have broken shells or those that are open and do not close when you tap them.
Pour a glass of water in a pan and bring it to a rapid boil. Add the mussels and cover the pan. Cook until the mussels open. This will only take a few minutes. Remove them from the pan and leave them to cool.
Remove all the shells from the mussels but retain half a shell for each mussel. Chop the mussels into three or four pieces.
Sauté half of a chopped onion with a little olive oil. As it begins to brown, add the chopped ham and the pieces of muscles and then put this all to one side.
Melt the butter in a saucepan and add the flour, stirring it with a wooden spoon. Slowly add the milk; then season with salt and cook for ten minutes whilst stirring continuously. Next add the mussels and stir well. Fill the saved mussel shells with the mixture. Allow to cool. Dip the shells in the beaten egg and then in bread-crumbs before deep frying in hot oil. Serve piping hot. Delicious!
