Breast of Chicken in Sherry
Ingredients
Use these ingredients to make a tastiest of chicken meals.
- 1lb (500g) chicken breast
- Olive Oil
- Black Pepper
- Thyme
- Salt
- Stuffed Olives (pepper)
- 2 Cloves
- 1 Glass Dry Sherry
- Chicken Stock
- Flour
Preparation
Preparation time is fairly minimal, a matter of a few minutes. First, remove any bone and skin from the chicken. Next, season with salt and coat well in flour.
Heat the olive oil until it is hot; then fry the chicken pieces until they are honey brown. Next remove them from the frying pan and season them with freshly ground black pepper and thyme.
In a casserole dish, heat a tablespoonful of olive oil, then add a glass of chicken stock and then a glass of sherry.
Using a mortar and pestle, crush the garlic and add to the casserole. Heat the stock until it is reduced by half. Add the chicken pieces and leave to cook on a low heat for eight minutes.
At the end of the cooking time, finely chop the olives into slices and add to the chicken. Serve hot with rice, vegetables.
